We make salted Ume (umeboshi), Ume juice and Ume wine (ume-syu). I am sure many people are big fan of Ume-syu, the Plum wine that is quite often served in Japanese restaurant If youre lucky enough to score a batch, making the ume plum syrup is a classic and joyful Japanese rite to celebrate the season.

The Ingredients need to make Japanese plum syrup:
  1. Prepare 1 kg of Japanese plum
  2. Prepare 1 kg of sugar (any sugar such as rock sugar or crystal sugar.)

Its the Japanese version of lemonade syrup. S tores in Japan carry the paraphernalia for making plum syrup from about the end of May to the middle of June. It is made by boiling down the juice extracted from plums and sugar. But it is possible to skip the boiling part, if you cant be bothered.

  4. Store the jar in a cool dark place for 1 month. Shake the jar occasionally. (Don’t open the lid!)
  5. After a month, it’s time to open the lid. Take plums out. Heat syrup in a pan and bring to boiling.
  6. Once boiled, add the syrup into a sanitized jar and store in fridge. (Nice golden color!)
  7. Enjoy with cold water or sparkling water (syrup water = 1 5). Over shaved ice is also a good idea. (You don’t have to dilute!)
