Use skillet to cook the ground chuck and ground alligator meat, raise to med high heat and constantly fold in pinches of the salt and pepper until to desired taste and evenly brown.   4. Prepare 1 of green bell pepper med diced
  5. It’s 15 oz of black beans drained
  6. It’s 15 oz of kidney beans drained
  7. It’s 32 oz of crushed tomatoes
  8. Prepare 32 oz of V8 tomato juice spicy hot
  9. You need 2 tbsp of Evoo
  10. It’s of sea salt
  11. You need of black pepper
  12. It’s 2 tsp of Ghost pepper infused salt (optional)
  13. It’s 1 tbsp of Cajun seasoning
  14. You need 2 tsp of cayenne pepper
  15. Prepare 2 tsp of cinnamon
  16. Prepare 1 tsp of ground ginger
  17. Prepare 2 tbsp of chili powder
  18. It’s 2 tsp of celery salt
  19. Prepare 1 tbsp of marjoram leaves
  20. You need 1 tbsp of ground cumin
  21. Prepare 1 tbsp of smoked paprika
  22. You need 2 of chipotle peppers in adobe sauce, minced

Add chili powder and cumin, stir well into mixture, and allow to cook one hour, stirring occasionally. Once alligator is tender, season to taste using salt and black pepper. This dish is always served at hunting camp dinners over spaghetti. Alligator chili and beans is something that Ive loved my entire life.

  6. Once at a good simmer and flavor has reached desired level add mixture into crock pot with V8 juice and all remaining seasoning
  7. Thoroughly mix and place at 2 and a half hours on low heat
  8. After done cooking give a taste to see if any additional salt, pepper, or spice would be desired, if so add, mix and simmer for 5 minutes then enjoy
