The Ingredients needed to make Roast Chicken for Holiday Dinner:
  1. Prepare 2 of thighs Chicken thighs
  2. It’s 1 of just less than 2 teaspoons Salt
  3. It’s 1 of Coarsely ground black pepper
  4. You need 1 dash of Olive oil
  5. Prepare of <Roast vegetables>
  6. It’s 1 of Onion
  7. You need 1 small of Carrot
  8. Prepare 2 of Potatoes
  9. You need 4 medium of sized sweet tomato
  10. It’s 3 of Mushrooms
Step to make Roast Chicken for Holiday Dinner:
  1. Pierce the chicken thighs several times with a fork and rub salt into both sides (a little more on the side without skin). Sprinkle with a generous amount of coarsely ground pepper.
  2. Rub olive oil onto the skin-side.
  3. Rub olive oil onto a baking tray and cover with baking parchment. If you dont have a baking tray, create two deep boxes using aluminium foil (one for each chicken thigh).
  4. Roughly chop the carrot into large chunk Slice the onion into 1cm slice Cut small potatoes in half, and larger potatoes into quarter
  5. Lay the onions onto the baking tray and place the chicken thighs on top. Roll them slightly so that only the skin side show Place the carrots, potatoes and tomatoes around the meat.
  6. Cook in a preheated oven at 200°C for 50-60 minutes, until the skin is crispy. Transfer the cooked chicken and potatoes to a serving dish.
  7. Set aside the tomatoes in a separate dish. Tip the rest of the vegetables from the baking tray into a frying pan, along with the juices from the meat. Slice the mushrooms into thick slices and lightly fry.
  8. Transfer the fried vegetables along with the tomatoes to the serving dish and its done. Its also good to garnish with parsley
