The Ingredients need to make Green Bean Casserole (from scratch):
  1. Prepare 450 g (1 lb.) of Green beans
  2. You need 250 g (1/2 lb.) of mushrooms
  3. You need of White mushroom sauce (béchamel)
  4. You need 2 Tbsp (30 g) of butter
  5. You need 2 Tbsp of flour
  6. You need 120 ml (1/2 cup) of whole milk
  7. You need 120 ml (1/2 cup) of water from blanching beans, vegetable broth or more milk
  8. Prepare 2 pinches of ground nutmeg
  9. Prepare 1 pinch of cayenne pepper
  10. Prepare of Topping
  11. It’s 1/2 of onion, sliced thinly
  12. It’s pinch of salt
  13. It’s 1/2 Tbsp of flour
  14. It’s 1/2 cup of Breadcrumbs for tossing onions
Step to make Green Bean Casserole (from scratch):
  1. Wash and cut of any stems of the green bean Bring a pot of water to a boil, add a good amount of salt and blanch the green beans for 2-3 minute Drain and immediately cool in ice water or running cold
  2. Chop up the mushrooms into small pieces
  3. Prepare the sauce Melt butter in a heavy pot or frying pan. Add the mushrooms and cook for 5 minutes until they are soft and juices are starting to come out.
  4. Stir in the Cook for 3 on medium heat.
  5. GRADUALLY add in the milk and whisk constantly to keep clumps out.
  6. Bring the milk to a boil slowly, make sure you stir constantly. Cook on very low heat at a bare simmer for 15-20 minutes or until thicker.
  7. Season with some salt to taste, a dash of ground nutmeg and optional cayenne.
  8. Make the fried onions Heat 1 tbsp vegetable oil or butter in a frying pan. Fry onions on medium low until browned stirring often - it will take several minute
  9. Toward the end when the onions have started to brown, sprinkle with a little flour to help crisp them up. Fry for another couple minutes until crisp.
  10. Toss onions with 1/2 cup breadcrumbs
  11. Preheat oven to 375°F/190°C. Arrange green beans in a baking dish big enough to hold them compactly. Pour over the sauce and spread out evenly.
  12. Bake for 20 minutes covered lightly with aluminum, or until bubbly and hot. (the baking time may vary depending on how deep your dish is - adjust by adding more time or baking less as needed).
  13. Remove from oven. Sprinkle the onion breadcrumb topping on top and bake another 5-15 minutes until breadcrumbs are browned.
  14. Serve and enjoy!
