The Ingredients need to make Meat Miso:
  1. It’s 300 grams of Ground pork (from a lean cut)
  2. It’s 1 piece of Finely chopped ginger
  3. Prepare 1/2 tsp of ★ Doubanjiang
  4. Prepare 4 tbsp of ★Tianmianjiang
  5. It’s 1 tbsp of ★Sake
  6. Prepare 1 tbsp of ★Soy sauce
  7. Prepare 1/2 tsp of ★ Chinese soup stock
  8. You need 1/2 of to 1 tablespoon Sugar
  9. It’s 1 of Sesame oil
  10. You need 10 of cm Green onion or scallion
Step to make Meat Miso:
  1. Stir fry the finely chopped ginger in sesame oil in a frying pan. Add the tianmianjiang and stir fry a little, then add the ground pork and stir fry until the color change
  2. Add the ★ ingredients and stir fry well. Add a little sugar (optional). Finally, add the finely chopped green onion and stir-fry briefly.
  3. This is a lightly-flavored meat miso that hasnt been thickened with katakuriko. If you want to make it thicker, pour in a katakuriko slurry.
  4. For homemade tianmianjiang, see. Its really handy since it can be used in many recipe
  5. I didnt add any garlic; if you would like to add it, use 1 clove worth thats finely chopped.
  6. This meat miso is delicious with chopped bamboo shoot
  7. Its delicious if you double the amount of ginger. Dont use ground pork from a fatty cut, or the meat-miso will become greasy.
  8. I didnt make this too salty, so you can enjoy it spooned over rice. Add more soy sauce or miso to taste.
