The Ingredients need to make Vegan Spicy Red Pepper Pasta Salad:
  1. Prepare 500 g of dried macaroni or orzo pasta
  2. Prepare 3 of whole roasted peppers (the kind sold in a jar in a light pickling brine)
  3. It’s 0.5 tbsp of Korean red pepper flakes
  4. Prepare 0.5 tbsp of Korean gochujang paste
  5. It’s 1 tsp of minced galangal
  6. You need of Juice of half a lime
  7. It’s 340 g of silken tofu
  8. You need 0.5 cup of passata
  9. You need Handful of fresh coriander, chopped
  10. You need to taste of salt pepper
Step to make Vegan Spicy Red Pepper Pasta Salad:
  1. Cook the pasta to the instructions on the packet then rinse under cold water and set to drain to stop it cooking further.
  2. Make the dressing by adding all the remaining ingredients except the coriander, salt and pepper to a blender or food processor. Blitz until combined to a smooth, thick pinky-red sauce.
  3. Decant the dressing to a large bowl and add the cold pasta and coriander. Using two large metal spoons carefully work through, turning it all over and over until incorporated.
  4. Add salt and pepper to taste.
