The Ingredients need to make Strawberry Hill Christmas Cake:
  1. Prepare of Sponge cake batter
  2. Prepare 3 medium of Eggs
  3. It’s 50 grams of Sugar
  4. Prepare 60 grams of Cake flour
  5. Prepare 1 tbsp of Milk
  6. Prepare 20 grams of Melted butter
  7. You need of Syrup
  8. Prepare 1 tbsp of Sugar
  9. It’s 1 tbsp of Rum
  10. You need of Mousse
  11. Prepare 250 grams of Strawberries
  12. It’s 30 grams of Sugar
  13. It’s 2 tsp of Lemon juice
  14. It’s 1 tsp of Rum
  15. You need 10 grams of Powdered gelatin
  16. Prepare 120 ml of Heavy cream
  17. Prepare of For finishing
  18. You need 150 ml of Heavy cream
  19. Prepare 1 tbsp of Sugar
  20. You need 1 of Strawberries
  21. Prepare 1 of Powdered sugar, apricot glaze (nappage)
Step to make Strawberry Hill Christmas Cake:
  1. Make the spongecake batter. Bring the eggs to room temperature. Combine milk and melted butter and place over a hot water bath. Preheat the oven to 200ºC.
  2. Put the eggs in a bowl and lightly beat. Add sugar and beat well over a 60ºC water bath. Tip See Helpful Hint
  3. Sift in the cake flour and fold in lightly with a rubber spatula. Add butter and milk and mix until the batter looks shiny.
  4. Pour into a baking sheet and smooth out the surface of the batter. Lightly rap the bottom of the baking sheet on the counter 2 - 3 times to release air bubble Bake in the oven for about 8 minute

  11. Put the gelatin over a hot water bath and dissolve. Add a small amount of the puree from Step 10 to the gelatin and combine. Add to the blender and blend.
  12. Add the mixture to the bowl of whipped heavy cream from Step 9. Mix well to combine.
  13. Pour the mousse into the bowl of cake from Step 8. Cut the leftover cake into a 15 cm round lid and cover the cake with it.
  14. Wrap in plastic wrap and chill in the refrigerator until firm. When firm, flip over the cake onto a dish and remove from the bowl.
  15. Add sugar to the heavy cream and whip until soft peaks form. Frost the cake with whipped cream, making sure to cover the whole cake.
  16. Top with fruit and decorations, and its done.
  17. Use a knife warmed in hot water to slice. It will slice beautifully this way.
