What is Sundubu Jjigae (Korean Spicy Soft Tofu Stew) Sundubu jjigae is a Korean stew made with soft (uncurdled) tofu as a highlight ingredient. Gogi sundubu-jjigae 고기 순두부찌개 Todays recipe is an all-beef version of Korean spicy soft tofu stew called sundubu-jjigae. This stew is savory, spicy, comforting, delicious, and easy to make, which is why its so popular with Koreans and non-Koreans too.

I made a video and recipe for sundubu-jjigae seven years ago (!) and its been watched over a million times on YouTube (!!). Sundubu jjigae is a korean stew thats made with soft tofu. In Korean, sundubu is soft tofu and jjigae is stew, thus soft tofu stew!

The Ingredients need to make Sundubu Jjigae (Spicy Tofu Stew):
  1. You need 1 pack of soft tofu
  2. It’s 100 g of meats / 100 g seafood (clams, prawns, mussels, crab, squid, etc), you can choose what your favorite item
  3. Prepare of Green onions
  4. Prepare 1 of Onion, minced
  5. You need 3-4 cloves of garlic, minced
  6. Prepare 1 of Chili, minced
  7. It’s 1 tsp of soy sauce/fish sauce
  8. Prepare 4 tsp of chili powder
  9. It’s 2 tsp of sesame oil
  10. Prepare 2 slices of kombu/ dashi for stock
  11. It’s 250 ml of water
  12. It’s 1 of egg

My husband and I are big fans of Korean cuisine, and one of our favorite dishes is sundubu jjigae. Its a Korean soft tofu stew thats a bit spicy in the most delightful way. The tofu used is a soft uncurdled form that yields the silkiest texture, and the stew has a bold red color offset by the tofu, seafood, zucchini, and enoki mushroom This Sundubu Jjigae (which literally translates to soft tofu stew) is one of my favourite Korean dishe

Step to make Sundubu Jjigae (Spicy Tofu Stew):
  1. Make the kombu stock, just boil water with kombu/dashi for 5 minute
  2. Heat the hot pot and put sesame oil, minced garlics, minced onions, and chili powder, stir for 5 minutes until mix well.
  3. Put the stock and soy sauce, mix well.
  4. When the stock boils, put the remaining ingredients like green onions, meats/seafood, and tofu, cooking for 5 minutes and the lastly put egg on the top.

It has a light yet really rich and flavourful base with a kick of spice from gochugaru. Kimchi Soondubu Jjigae (Spicy Soft Tofu Stew with Kimchi) One of the variations of the spicy soft tofu stew (순두부 찌게 Soondubu Jjigae) with kimchi and beef. Adding kimchi makes the jjigae explode with flavor Loaded with pork, kimchi, plenty of silken tofu, and finished off with an egg cracked on top, its a delicious meal thats surprisingly easy to make at home. Once youve made the base stock, the whole dish comes together in one pot.
