- You need 1 cup of brown sushi rice
- It’s 2 cups of water
- It’s 2 tablespoons of brown rice vinegar
- You need 2 tablespoons of mirin
- You need 1 tablespoon of oil
- Prepare 1 cup of mixed mushrooms
- It’s 3 tablespoons of ponzu
- It’s 1 of wedge of lemon or lime
- It’s of For Ponzu
- It’s 2 tablespoons of Tamari (or Soy as an alternative)
- Prepare 1 tablespoon of Yuzu (lime or lemon juice as an alternative)
- It’s 1 tablespoon of Dashi (optional)
- You need 1 splash of mirin
Step to make Ponzu Mushrooms and Brown Rice (bowl or onigiri):
- Wash the rice and cook according to instruction Brown rice will normally take a lot longer than normal sushi rice (around 40 minutes). When the rice is cooked add the rice vinegar and mirin using a gentle, cutting movement.
- Brush the mushrooms with oil and fry in a pan or grill until they are almost cooked.
- You can buy ponzu dressing or make a quick version by mixing 2 parts soy sauce to 1 part citrus (lemon, lime or yuzu) and a splash of mirin.
- Reduce the heat and add the ponzu to the pan. Gently move the mushrooms, they will absorb the dressing and become sticky. Serve with the rice, a sprinkle with furikake and a wedge of fresh citrus fruit.
