The Ingredients need to make Instant pot Portuguese Chicken and Rice:

1. You need 3 of quarter parts of chicken
2. You need 1 tablespoon of light soy sauce
3. Prepare 1 tablespoon of white cooking wine (can use regular white wine)
4. You need 1/2 teaspoon of sugar
5. It’s 2 of small potatoes
6. It’s 3 of carrots
7. You need 1 of small onion
8. You need 3 cloves of garlic minced
9. Prepare 1/2 of red pepper
10. It’s 1/2 of green pepper
11. Prepare 2 of bay leaves
12. It’s 3/4 cups of coconut milk
13. Prepare 1 1/2 teaspoon of turmeric
14. You need 1 teaspoon of cumin
15. It’s to taste of Salt and pepper
16. You need 1 tablespoon of oil
17. Prepare 1 cup of jasmine rice
18. Prepare 1 cup of water

Step to make Instant pot Portuguese Chicken and Rice:

1. Take the first 4 ingredients and combine them. And marinate the chicken for 20 minute
2. While the chicken is marinating, quarter the potatoes, slice the onion, cut the carrots into thirds, and slice the peppers into think slice
3. Heat the instant pot to sear with oil. Add onion and garlic
4. Add chicken… let the chicken caramelize before turning Add the turmeric, cumin, salt and pepper and stir until fragrant.
5. Add the potatoes, carrots, peppers, bay leaves and coconut milk and stir.
6. Put rice in a steamer basket then add the water and place in instant pot. Make sure all of the rice is covered with Close the lid and set to the chicken setting on your instant pot.
