The Ingredients needed to make Malabar Chicken Biryani:
  1. It’s 1/2 kg of Chicken with bones
  2. It’s of For Chicken gravy
  3. Prepare 3 tbsp of Oil +Ghee
  4. You need 2 of Onion thinly sliced
  5. You need 5 of Green Chilies crushed
  6. You need 1 tbsp of Garlic crushed
  7. It’s 1/2 tbsp of crushed Ginger
  8. It’s 2 tbsp of Mint leaves chopped
  9. You need 2 of small Tomatoes cut lengthwise
  10. It’s half of teaspoon Pepper
  11. It’s 1/4 tsp of Turmeric
  12. Prepare half of teaspoon Garam Masala
  13. You need 1 teaspoon of Salt or as per taste
  14. Prepare 3 tbsp of Water
  15. It’s 3 tbsp of Water
  16. You need 1 teaspoon of biryani Masala powder
  17. You need 2 tbsp of chopped Coriander leaves
  18. Prepare of For Rice
  19. It’s 11/2 cup of basmati Rice
  20. It’s 3 cups of hot Water
  21. Prepare 3 tbsp of Oil + Ghee
  22. Prepare 1 of small inch Cinnamon
  23. You need 2 of Cloves
  24. Prepare 1 teaspoon of rose Water
  25. Prepare 1/2 of teaspoon biryani Masala powder
  26. It’s As per taste of Salt
  27. You need of For Garnish
  28. Prepare 1/2 tsp of Saffron soaked in 3 tbsp hot milk
  29. It’s 1 tbsp of fried Raisins
  30. It’s 8-10 of fried Cashews
  31. You need 1 cup of fried Onions
Step to make Malabar Chicken Biryani:
  1. Wash and soak the rice for 1 hour drain excess water keep it aside
  2. Heat oil and ghee in a Deep botton sauce pan over medium heat, add onions with little salt and saute until lightly golden brown
  3. Add ginger garlic green chilies and mint leaves, saute well for 1 minute
  4. Add tomatoes and saute for 3 to 4 minutes until Mushy
  5. Add cleaned chicken, Spice powders, salt and Mix well
  6. Cover with a lid and cook over medium heat for 10 minutes then reduce the flame to low and cook for another 10 minutes until chicken is tender and gravy is thick. Add lime juice and coriander leave Mix well. Keep it aside
  7. In a heavy bottom Pan, heat the oil and ghee, add cinnamon cardamom close and sort for few second Add rice and fry for 4-5 minutes on medium heat
  8. Add the hot water,salt biryani masala powder and rosewater to the rice. Mix well. Cover and cook until done. Stir in between while cooking
  9. Now grease a heavy bottom pan, layer with 1/2 of chicken masala, layer with half of rice, garnish with half of cashews, raisins and fried onion Sprinkle half of saffron milk on top. Layer again with remaining chicken masala, rice and cashews raisins and fried onion Sprinkle remaining saffron milk on top. Add some coriander leaves on top. Cover tightly with lid
  10. Cook on a very low heat for 5 to 8 minutes, switch off, gently mix. Serve hot with raita chutney and Pickle
