The Ingredients need to make Chicken Biryani:
  1. It’s of For Chicken Marinate
  2. It’s 1 of 1/2 kg chicken
  3. It’s 1 packet of biryani masala
  4. It’s 1 cup of yoghurt
  5. Prepare 8 of green chillies
  6. Prepare 4 of tomatoes chopped
  7. Prepare 2 of Onions sliced
  8. You need 2 tbspn of ginger garlic paste
  9. You need 2 tbspn of lemon juice
  10. It’s 1 of bay leaf
  11. It’s 1 tbspn of whole spices
  12. Prepare 1 tsp of red chilli powder
  13. Prepare 1/4 tsp of turmeric powder
  14. Prepare to taste of Salt
  15. Prepare 1 tbspn of roasted crushed coriander
  16. Prepare 1 tsp of garam masala powder
  17. Prepare 1 tsp of cumin seeds
  18. It’s 1 cup of Oil (as required)
  19. Prepare of Water as required
  20. Prepare of For Raita
  21. You need 1 bowl of yoghurt
  22. It’s 1/2 of cumin seeds roasted
  23. It’s to taste of Salt
  24. Prepare 1 of cucumber chopped
  25. You need 1 of Onion chopped
  26. It’s 1/2 cup of pholkiyan
  27. Prepare 1 of potatoes boiled and chopped
  28. Prepare 1/2 tsp of black pepper powder
  29. You need of For Rice
  30. You need 2.5 glass of Basmati Rice
  31. It’s 2.5 tsp of salt
  32. Prepare 1 of bay leaf
  33. You need 1 of star anise
  34. You need 1 of cinnamon stick
  35. Prepare 2-3 of Cardamon pods
  36. Prepare 3 of cloves
  37. You need of Few drops vinegar
  38. You need of Water as required
  39. It’s of For topping
  40. You need 2 of Crispy Brown Onions (fried Slices)
  41. It’s 1/2 cup of fresh coriander leaves
  42. You need 1/2 cup of Mint leaves
  43. It’s 2 of lemon slices
  44. You need 1 of 1/2 tbspn ghee or butter
  45. Prepare 2 tbspn of hot milk 1/4 tsp yellow food colour mix it
Step to make Chicken Biryani:
  1. In a large bowl add chicken, ginger garlic paste,garam masala powder, red chilli powder,1 Cup yoghurt, turmeric powder, salt to taste, Biryani masala, and lemon juice..
  2. Mix everything well and marinate the chicken. Cover and set this aside for 1 hour. (You can also rest it overnight in the fridge).
  3. Bring water to a roaring boil and add salt, whole spices and basmati rice. Cook for exactly 5 minutes and drain completely, leaving the whole spices in the rice. This will cook the rice to about 70% doneness which can be checked by pressing a grain of rice between two fingers - the rice should still be raw in the middle
  4. In a pan add oil,bay leaf, whole spices, cumin seeds and add onion cook well
  5. Now add marinated chicken and cook then add tomatoes, roasted crushed coriander and green chillies Cook until done
  6. Layering and Cooking Chicken Biryani. Heat a heavy bottomed pot and add the chicken to it. Scatter half the onions all over the chicken, and then all the coriander,lemon slices and mint leave Next layer the rice all over the mint and coriander, and in the end drizzle yellow clr mixture and ghee all over the rice. Cover and cook on a low flame for 20 minutes
  7. For Raita… In a bowl add yoghurt, pholkiyan, potato cucumber,onions,black pepper powder,salt and cumin seeds mix well
  8. Once the biryani is cooked, let it rest for 5 minutes, and finish by scattering the remaining onions on top. Serve hot with your Raita.. Enjoy 🙂
  9. Note.. In the last step of layering and cooking the biryani, all the ingredients are par cooked. Cooking the biryani on a low flame for 20 minutes, steams and cooks everything to donenes If you dont have a heavy bottomed pot, and are using a regular pot, you can place it on a tawa (or flat griddle) and then place it on the stove on a medium flame to avoid burning the chicken. The tawa or griddle creates a degree of separation between the flame and the pot and provides the perfect heat source.
