The Ingredients need to make Chicken Biryani:
- It’s of For Chicken Marinate
- It’s 1 of 1/2 kg chicken
- It’s 1 packet of biryani masala
- It’s 1 cup of yoghurt
- Prepare 8 of green chillies
- Prepare 4 of tomatoes chopped
- Prepare 2 of Onions sliced
- You need 2 tbspn of ginger garlic paste
- You need 2 tbspn of lemon juice
- It’s 1 of bay leaf
- It’s 1 tbspn of whole spices
- Prepare 1 tsp of red chilli powder
- Prepare 1/4 tsp of turmeric powder
- Prepare to taste of Salt
- Prepare 1 tbspn of roasted crushed coriander
- Prepare 1 tsp of garam masala powder
- Prepare 1 tsp of cumin seeds
- It’s 1 cup of Oil (as required)
- Prepare of Water as required
- Prepare of For Raita
- You need 1 bowl of yoghurt
- It’s 1/2 of cumin seeds roasted
- It’s to taste of Salt
- Prepare 1 of cucumber chopped
- You need 1 of Onion chopped
- It’s 1/2 cup of pholkiyan
- Prepare 1 of potatoes boiled and chopped
- Prepare 1/2 tsp of black pepper powder
- You need of For Rice
- You need 2.5 glass of Basmati Rice
- It’s 2.5 tsp of salt
- Prepare 1 of bay leaf
- You need 1 of star anise
- You need 1 of cinnamon stick
- Prepare 2-3 of Cardamon pods
- Prepare 3 of cloves
- You need of Few drops vinegar
- You need of Water as required
- It’s of For topping
- You need 2 of Crispy Brown Onions (fried Slices)
- It’s 1/2 cup of fresh coriander leaves
- You need 1/2 cup of Mint leaves
- It’s 2 of lemon slices
- You need 1 of 1/2 tbspn ghee or butter
- Prepare 2 tbspn of hot milk 1/4 tsp yellow food colour mix it
Step to make Chicken Biryani:
- In a large bowl add chicken, ginger garlic paste,garam masala powder, red chilli powder,1 Cup yoghurt, turmeric powder, salt to taste, Biryani masala, and lemon juice..
- Mix everything well and marinate the chicken. Cover and set this aside for 1 hour. (You can also rest it overnight in the fridge).
- Bring water to a roaring boil and add salt, whole spices and basmati rice. Cook for exactly 5 minutes and drain completely, leaving the whole spices in the rice. This will cook the rice to about 70% doneness which can be checked by pressing a grain of rice between two fingers - the rice should still be raw in the middle
- In a pan add oil,bay leaf, whole spices, cumin seeds and add onion cook well
- Now add marinated chicken and cook then add tomatoes, roasted crushed coriander and green chillies Cook until done
- Layering and Cooking Chicken Biryani. Heat a heavy bottomed pot and add the chicken to it. Scatter half the onions all over the chicken, and then all the coriander,lemon slices and mint leave Next layer the rice all over the mint and coriander, and in the end drizzle yellow clr mixture and ghee all over the rice. Cover and cook on a low flame for 20 minutes
- For Raita… In a bowl add yoghurt, pholkiyan, potato cucumber,onions,black pepper powder,salt and cumin seeds mix well
- Once the biryani is cooked, let it rest for 5 minutes, and finish by scattering the remaining onions on top. Serve hot with your Raita.. Enjoy 🙂
- Note.. In the last step of layering and cooking the biryani, all the ingredients are par cooked. Cooking the biryani on a low flame for 20 minutes, steams and cooks everything to donenes If you dont have a heavy bottomed pot, and are using a regular pot, you can place it on a tawa (or flat griddle) and then place it on the stove on a medium flame to avoid burning the chicken. The tawa or griddle creates a degree of separation between the flame and the pot and provides the perfect heat source.
