The Ingredients needed to make Cowpea Curry:
- You need 250 gms of Cowpea
- You need 250 gms of Brinjal
- You need 1/4 tsp of Turmeric powder
- It’s As needed of Salt
- You need 1/2 cup of Tamarind water
- Prepare of Ingredients to grind
- You need 3 tbsp of Chana dal
- You need 1 tbsp of Coriander seeds
- You need 4-5 of Red chilli
- Prepare 3 tbsp of Coconut
- It’s of Ingredients to temper
- You need 2 tbsp of Oil
- It’s 1/2 tsp of Mustard seeds
- It’s 1/4 tsp of Asafoetida
- Prepare 1/4 tsp of Cumin seeds
- You need As required of Few Curry leaves
Step to make Cowpea Curry:
- Soak cowpea for 3 to 4 hour
- Pressure cook soaked cowpea for 2 whistle
- Grind the ingredients to a smooth paste.
- Cut brinjal into long piece
- Heat kadai and add the ingredients to temper.
- Add brinjal pieces and fry it.
- Pour tamarind water and allow to cook.
- Add the pressure cooked cowpea.
- Added needed salt and mix well. Allow to boil for 1 minute. Now healthy and simple cowpea curry is ready to serve.
