The Ingredients needed to make Panzanella Salad Tarts:
- It’s 24 slices of white bread or brown bread
- Prepare 1/3 cup (80 ml) of extra virgin olive oil
- It’s 250 g of small cheery tomatoes, halved
- Prepare 1 of small clove garlic, crushed
- Prepare 75 g of olives, pitted, halved
- Prepare 1 of roasted red capsicum, seeded, finely chopped
- It’s 1 1/2 Tbsp of small capers, rinsed, drained
- It’s 12 of Pickled onions
- It’s 2 tsp of vinegar OR lemon juice
- It’s leaves of Fresh mint
- It’s cubes of Cheddar cheese in small
- You need cubes of Feta cheese in small
Step to make Panzanella Salad Tarts:
- Preheat oven to 190°C. Using a rolling pin, flatten bread slices, then cut out 24 rounds from bread using a 7cm pastry cutter.
- Combine 1/4 cup (60ml) oil and garlic in a small bowl. Grease two 12-hole, 5cm tart-tin trays with oil mixture. Press bread rounds into tart tins, then using the bottom of a small glass, press down firmly on bread to fit into base and corner Brush generously with oil mixture and bake in oven for 20 minutes or until golden. Set aside to cool.
- Combine tomatoes, olives, capsicum, capers,pickled onion,vinegar and remaining oil in a bowl, and season with salt and pepper. Just before serving, line bread cases with mint leaves, then spoon in tomato filling.
Serve with cheddar cheese,feta cheese salad dressing.
