The Ingredients need to make One-Pot Mexican Quinoa:
  1. It’s 1 Tbs of olive oil
  2. Prepare 2 cloves of garlic, minced
  3. Prepare 1 of jalapeno, minced
  4. Prepare 1 cup of quinoa
  5. It’s 1 cup of vegetable broth
  6. Prepare 1 (14 oz) of can of black beans drained
  7. You need 1 (15 oz) of can fire-roasted diced tomatoes
  8. It’s 1 cup of corn kernels, frozen, canned, or roasted
  9. Prepare 1 tsp of chili powder
  10. You need 1/2 tsp of cumin
  11. Prepare to taste of Kosher salt and freshly ground black pepper,
  12. It’s 1 of avocado, halved, seeded, peeled, and diced
  13. You need of Juice of 1 lime
  14. You need 2 Tbs of chopped fresh cilantro leaves
Step to make One-Pot Mexican Quinoa:
  1. Heat olive oil in a large skillet over medium high heat.
  2. Add garlic and jalapeno, and cook, stirring frequently, until fragrant, about 1 minute.
  3. Stir in quinoa, vegetable broth, beans, tomatoes, corn, chili powder and cumin; season with salt and pepper, to taste.
  4. Bring to a boil; cover, reduce heat and simmer until quinoa is cooked through about 20 minute
  5. Stir in avocado, lime juice and cilantro.
  6. Serve immediately.
