Japanese Mapo Tofu vs Chinese Mapo tofu: The Japanese mapo tofu often contains a mix of sweet and spicy hot bean sauce. The Chinese version typically does not contain the sweet bean sauce. So looking at the ingredient list, my doubanjiang tube paste already has this mix of sweet + spicy.

  15. You need of ground pork

Tofu in a garlicky, spicy meat sauce is vey tasty, and it goes very well with Steamed Rice. That may be the reason why Japanese people love the dish so much. Although originating in China, mapo tofu has worked its way into the heart of Japanese food culture. Also called mabo tofu, this spicy, garlicky and savory traditional tofu features in a wide range of dishes; it also works well eaten alone or paired with steamed rice or zakkokumai.

Step to make Japanese style mapo tofu:
  1. Mix together sauce ingredients
  2. Mince garlic and ginger finely and sauté on medium until fragrant
  3. Add meat
  4. When meat is brown add sauce mixture and stir
  5. Add tofu and stir until coated with sauce
  6. Sprinkle chopped up scallions before turning off heat
  7. Serve over rice

Todays recipe is a Japanese take on a very authentic and famous Chinese Szechuan dish-mapo tofu (麻婆豆腐), or as its known in Japan: Mabo Tofu (マーボー豆腐). The ingredients are unmistakably Japanese, and yet the flavor is very reminiscent of the original dish-minus the tongue-numbing Szechuan peppercorns, of course. Mābōdōfu (麻婆豆腐) is the Japanese name for Mapo Tofu, which is a Chinese dish from Sichuan province. Tofu and ground meat are stir fried with a flavoursome sauce. But the flavour of Mābōdōfu is yet again modified to suit to the Japanese palette and not as spicy as the Chinese version of mapo tofu.
