The Ingredients needed to make White Butter Cake with Strawberry and Blueberry Whipped Cream:
- You need of BUTTER CAKE
- You need 3 cup of cake flour
- It’s 1 tbsp of baking powder
- Prepare 1/4 tsp of baking soda
- It’s 1/2 tsp of salt
- It’s 1 1/2 cup of unsalted butter, melted
- It’s 1 1/4 cup of granulated sugar
- Prepare 2 tsp of vanilla extract
- You need 4 of large eggs
- You need 2/3 cup of milk, I used whole. milk
- Prepare of STRAWBERRY WHIPPED CREAM
- You need 2 cup of cold heavy whipping cream
- It’s 2/3 cup of good quality strawberry preserves or jam, chilled in refigerator
- Prepare 4 tbsp of confectioners sugar
- It’s 1 1/2 tsp of vanilla extract
- Prepare of drops of red food coloring
- You need of BLUEBERRY WHIPPED CREAM
- It’s 1 cup of cold heavy whipping cream
- Prepare 1/3 cup of good quality blueberry preserves or jam, chilled in refigerator
- You need 2 tbsp of confectioners sugar
- It’s 3/4 tsp of vanilla extract
- It’s of drops of blue food coloring
- You need of GARNISH/DECORATIONS
- You need of fresh strawberries
- It’s of fresh blueberries
- You need 1/4 cup of red, white and blue sprinkles
Step to make White Butter Cake with Strawberry and Blueberry Whipped Cream:
- MAKE CAKE
- Spray 4 - 8 inches round cake pans with baking spray. Preheat oven to 350
- Whisk flour, baking soda, baking powder and salt together in a bowl, set aside
- In a large bowl beat butter and sugar together until creamy and well combined 2 minutes
- Add flour and milk, stir until moistened, beat in eggs and vanilla just until smooth. Pour evenly into prepared pans
- Bake for 15 to 18 minutes just until a toothpick comes out clean. Cool about 10 minutes in pans on a rack then remove from pans to cool completely on racks
- MAKE STRAWBERRY WHIPPED CREAM
- Beat cream until soft peaks form then beat in strawberry preserves, sugar and vanilla, add desired amount of food color to make a pink/red color. Beat just until firm peaks form
- MAKE BLUEBERRY WHIPPED CREAM
- Beat cream until soft peaks form, add blueberry preserves, sugar, vanilla and desired amount of blue food coloring for a blue whipped cream, and beat just until firm peaks form
- ASSEMBLE CAKE
- Place one cake layer on serving plate, bottom flat side up, cover with 1/2 of blueberry whipped cream
- Add second cake layer, flat side up and cover with some of the strawberry whipped cream
- Add third cake layer, flat side up and cover with remaing blueberry whipped cream
- Place remaining top cake layer on, flat side up and cover entire cake with remaing strawberry whipped cream
- Decorate cake with fresh strawberry and blueberry and red, white and blue sprinkle Keep cake covered in refrigerator
