The Ingredients needed to make Easy Chicken Quesadilla:
  1. You need 1 lb. of boneless skinless chicken breasts, sliced into strips
  2. Prepare 1 tbsp. of extra-virgin olive oil
  3. Prepare 2 of bell peppers, thinly sliced
  4. It’s 1/2 of onion, thinly sliced
  5. You need 1/2 tsp. of chili powder
  6. You need 1/2 tsp. of ground cumin
  7. It’s 1/2 tsp. of dried oregano
  8. Prepare to taste of Salt and Pepper
  9. It’s 4 of medium flour tortillas
  10. It’s 2 cup of shredded Monterey jack
  11. Prepare 2 cup of shredded cheddar
  12. You need 1 of avocado, sliced
  13. You need 1 tbsp. of vegetable oil
  14. You need 2 of green onions, thinly sliced
  15. Prepare of Sour cream, for serving
Step to make Easy Chicken Quesadilla:
  1. In a large skillet over medium-high heat, heat olive oil. Add peppers and onion and season with salt and pepper. Cook until soft, 5 minute Transfer to a plate.
  2. Heat remaining tablespoon vegetable oil over medium-high heat. Season chicken with spices, salt, and pepper and cook, stirring occasionally, until golden and cooked through, 8 minute Transfer to a plate.
  3. Preheat oven to 350 degrees F (175 degrees C).
  4. Layer half of each tortilla with the chicken and vegetable mixture, then sprinkle with the Cheddar cheese, bacon bits, and Monterey Jack. Fold the tortillas in half and Place onto a baking sheet.
  5. Bake quesadillas in the preheated oven until the cheeses have melted, about 10 minute
  6. Slice into wedges and serve with sour cream.
