  1. Prepare 1 of 3-5 lb Chicken

  6. You need 1/4 C of Vinegar (I used pomegranate)
  7. You need 1/4 C of Jam or Marmalade
  8. You need 1 tsp of Cornstarch mixed with 1tsp water
  9. Prepare 1 tsp of Dijon mustard
  10. You need 1 T of Butter

Then, pat the chicken dry with paper towels, then season it liberally on both sides and in the cavity with salt and pepper.
