The Ingredients needed to make Njugu Maandazi #4wkschallenge#authormarathon#foodfotochallenge#:
  1. It’s 500 g of APF
  2. It’s 3 of Eggs
  3. You need 1.5 Tbsp of Baking Powder
  4. Prepare 0.5 tsp of egg yellow food color
  5. It’s 2 Tbsp of margarine
  6. Prepare 3 Tbsp of sugar
  7. You need 150 ml of warm milk
  8. Prepare 50 g of pan fried Njugu, blend
  9. You need of Lemon rind grated, from one lemon (optional)
  10. You need 1-2 Tbsp of cardamon, grounded
Step to make Njugu Maandazi #4wkschallenge#authormarathon#foodfotochallenge#:
  1. Mix flour, Color, BP and sift. Add margarine and mix till its well incorporated. Add Njugu, cardamon and lemon rind and mix well.
  2. Add eggs, mix well. Add milk little by little as you knead. When it forms dough, continue kneading for 10minute Divide the dough, and cover with a warm damp towel for 30minute
  3. Knead them again for 5minutes each and start making shapes as you arrange them in a lightly flour dusted surface. Do this till youre done with the dough. Do not make them flat as in thin like chapati, we need flesh in this kind of mandazi…..see 2nd photo for size.
  4. Heat your oil. Test it with a piece of dough, and start dropping your pieces, first ones first, cooking them for 3minutes on both sides and until you get your desired brown colour. Remember the oil heat should not be like that for making potato chips but moderate heat to allow you cook them for 3min both sides and do the same to all the other piece Serve warm with a cup of tea or a glass of milk.
