The Ingredients needed to make Breakfast Frittata:
  1. Prepare of Plant based sausages or any vegetarian meat
  2. It’s 1 of onion
  3. It’s 1 of red bell pepper, diced
  4. Prepare 1 of zucchini, diced
  5. You need 3 cups of kale, chopped
  6. Prepare of Basil leaved, shredded
  7. You need 12 of eggs
  8. You need .5 cup of half and half
  9. Prepare 8 oz of mozzarella cheese
  10. It’s of Italian seasoning
  11. It’s of Salt and pepper
  12. Prepare of Olive oil
Step to make Breakfast Frittata:
  1. Preheat oven to 375 degree Grease baking dish.
  2. In a skillet, add oil and cook meat over medium heat. Once meat browns, spread meat over baking dish.
  3. In the skillet, saute onions for 2-3 minute Add bell peppers and zucchini and cook for another 3-4 minutes until the vegetables have softened. Add kale and stir until wilted.
  4. Pour vegetables evenly over the meat on the baking dish. Sprinkle basil over all of thi
  5. In a large bowl, whisk eggs thoroughly. Add half and half, mozzarella, Italian seasoning, salt and pepper. Mix thoroughly.
  6. Pour mixture evenly over entire dish.
  7. Bake for 25 min or until eggs are set and top is beginning to brown.
  8. Allow to cool and cut frittata into desired portion Serve immediately or store in tupperware as a nice meal prep! (Note add some flare and serve with a roasted garlic tomato sauce!)
