Crisp rice cereal is mixed with an assortment of dried fruit and nuts in these sweet no-bake bar We bike and hike several times a week and take these bars with us for a tasty boost of carbs and protein. Wrapped individually and frozen, they are easy to stuff in a pack on your way out the door.

Peanuts, peanut butter and peanut butter baking chip-oh my! This is the no-bake cereal bar for peanut butter lovers! These no bake peanut butter cereal bars are definitely more a dessert than a snack.

The Ingredients needed to make Rice Cereal Bars with Peanut Butter:
  1. It’s 50 grams of Peanut butter (unsweetened)
  2. You need 200 grams of Marshmallows
  3. You need 300 ml of Peanuts
  4. It’s 800 ml of Puffed rice cereal (pon-gashi)
  5. It’s of Optional
  6. Prepare 135 grams of White Chocolate
  7. You need 40 ml of Heavy cream

Reduce heat to low and stir in peanut butter. Add dry cereal, oats and raisins; mix well. Add the brown rice cereal to the mixture and combine. These cereal bars are the best after school snack that my kids absolutely love.

Step to make Rice Cereal Bars with Peanut Butter:
  1. Combine the chopped peanuts and rice cereal. I measured each with a measuring cup before combining.
  2. Put the marshmallows and peanut butter in a bowl, and microwave for 2 to 3 minutes until melted. The marshmallows will puff up.
  3. Mix the peanut butter and marshmallows together rapidly. It will deflate and become a sticky cream.
  4. Put the peanuts and rice cereal into the bowl with the marshmallows and mix to combine. It will becoming sticky and stringy like natto, and will cool fast and start to harden, so work as quickly.
  5. Put the mixture into a mold (I used a Tupperware container) lined with parchment paper. Press down on it hard to form into a rectangle. Cut when cooled.
  6. Form golfball-sized balls of with any of the mixture that doesnt fit in the tin.
  7. Optionally, coat the top of the bars with white chocolate. Warm the chocolate and cream in the microwave to melt.
  8. Mix well, and spread evenly over the surface of the hardened cereal. Chill for about an hour in the refrigerator until set.
  9. Cut into whatever size you like and enjoy.
  10. In the U., Kelloggs Rice Krispies are the standard puffed rice cereal to use. Its hard to get in Japan, so I used puffed rice (pon-gashi) instead. I found it in the snacks corner of a 100 yen shop.
