  1. You need 7 oz of dried chickpeas soaked overnight
  2. You need 2 tsp of salt
  3. Prepare 1/2 tsp of baking soda
  4. You need 1 of handful of dried Chinese mushrooms soaked in water 30 minutes
  5. You need 5 tbsp of ghee or peanut oil
  6. It’s 2 bunch of green onions chopped finely
  7. It’s 3 tbsp of minced garlic
  8. You need 2 of inch piece of ginger root grated
  9. It’s 3 large of tomatoes chopped
  10. It’s 1 tsp of ground turmeric
  11. Prepare 3 tbsp of lemon juice
  12. It’s 2 tbsp of cumin seed
  13. It’s 1 tsp of garam masala
  14. Prepare 1/2 tsp of ground chilies
  15. It’s 1 tsp of ground cumin
  16. You need 1 cup of water
  17. It’s 3 tbsp of fresh coriander leaves
Step to make Dhingri Chole (dry white mushrooms with chickpeas):
  1. after soaking chickpeas over night drain cook with water salt baking soda till soft but crisp
  2. drain mushrooms chop coarsely
  3. heat the oil in pan fry onions till golden brown add garlic ginger fry 4 minutes add tomatoes turmeric lemon juice cumin seeds garam masala powdered chilies ground cumin stir fry
  4. add the mushrooms stir fry 1 minute add chickpeas cook for 5 minutes cover 5 minutes more sprinkle fresh coriander
