The Ingredients needed to make Mexican Albondigas:
  1. Prepare 2 1/4 pounds of ground beef
  2. Prepare 1/3 cup of brown onion
  3. You need 1/3 cup of rice
  4. It’s 2 of eggs
  5. You need 1/3 cup of chopped tomatoes
  6. It’s 1 tbs of yerba buena ( mint leave)
  7. Prepare 1 tbs of dried oregano
  8. You need 1 tbs of black pepper
  9. You need 1/2 tbs of salt
  10. It’s 4 of fresh chopped potatoes
  11. Prepare 3 of fresh chopped carrots
  12. It’s 3 of chopped celery sticks
  13. It’s 3 of fresh corn husks
  14. You need 2 of tomatoes
  15. You need 1/2 of brown onion
  16. You need 1 tbs of chicken flavor bouillon
Step to make Mexican Albondigas:
  1. Place ground beef into a bowl and add 1/3 cup onion.
  2. 1/3cup rice.
  3. 2 eggs
  4. 1/2 cup chopped tomatoe
  5. 1 tbs chopped fresh yerba buena, (also know as mint.)
  6. 1 tbs dried oregano.
  7. 1 tbs balck pepper and 1/2 tsp salt
  8. Mix all ingredients together with your hand
  9. Once its all mixed, start to forming palm sized meatball
  10. It should look something like this )
  11. In the blender add 1 cup water 2 tomatoes and 1/2 onion, chicken flavored bouillon to tas and blend.
  12. Add to pot that is already filled half way with
  13. Let it come to a boil then start to add your meatballs boil them for 15 minutes before adding your vegetable
  14. Add your vegetables and finish cooking until your vegetables are nice and tender )
