The Ingredients need to make Arroz Rojo Mexicano:
  1. Prepare 1 cup of Long grain rice
  2. Prepare 1 of Large tomato
  3. Prepare 4 of Garlic pods
  4. You need 3/4 cup of Onions
  5. It’s 2 tsp of Paprika
  6. You need 2 tsp of red chilli powder
  7. You need 1/4 cup of Canned tomato paste
  8. You need 1/2 cup of vegetable or Chicken broth
  9. You need as needed of Olive oil
  10. It’s As per taste of Kosher salt
  11. Prepare As required of Scallions [ spring onion greens] to garnish
  12. You need As required of Parsley to garnish
Step to make Arroz Rojo Mexicano:
  1. Heat oil in a pan, add garlic and tomato and sauté it until the tomatoes get mashed. Add paprika, chilli powder and a little salt. Sauté it for a minute or two. Remove from the pan. Allow it to cool. Now put it in a blender along with the tomato paste/ Blend it well.
  2. In the same pan add a little more oil and sauté onions till golden brown. Now add the washed rice and roast it until the rice is golden brown.
  3. In a pot add the roasted rice and tomato mixture. Mix it well. Now add the vegetable/chicken broth. Adjust salt and Bring to a boil, then reduce the heat to a low simmer and cover the pot. Let cook on a very low simmer for 15 minutes, or as long as your package of rice indicates is the right cooking time for your rice.
  4. Cover it and keep aside for 10 minute
  5. Garnish it with scallion/ parsley. Fluff the rice with a fork and serve.
