The Ingredients need to make Keto Lasagna:
  1. Prepare of The mince
  2. It’s 1 kg of beef mince
  3. Prepare 1 of large red onion, chopped
  4. Prepare 1 can of chopped tomatoes
  5. You need 1 tsp of garlic powder
  6. Prepare 1 tsp of cayenne pepper
  7. It’s 1 tsp of smoked paprika
  8. You need 1 tsp of madras curry
  9. It’s of Salt pepper
  10. Prepare of Vegetable oil for frying
  11. Prepare of The aubergines
  12. It’s 2 of large aubergines, slices in circles
  13. Prepare 2 tbsp of olive oil
  14. Prepare 1 tsp of salt
  15. Prepare of The Sauce
  16. Prepare 250 g of greek cheese
  17. It’s 1 cup of greek yoghurt
  18. Prepare Handful of chopped chives
  19. You need Handful of chopped parsley
  20. Prepare of Topping
  21. You need 100 g of grated cheddar cheese
  22. Prepare 100 g of grated parmesan cheese
Step to make Keto Lasagna:
  1. Preheat oven to 200 degrees and place a baking a sheet on a baking tray. Coat the aubergines with olive oil and sprinkle with salt. Oven bake for 10 mins and set aside.
  2. Heat oil and fry mince till browned. Add onions and saute. Add garlic, paprika, cayenne pepper and fry for a further minute. Add can of tomatoes and simmer for 20 min
  3. In a bowl, add the sauce ingredients and mix well with a whisk.
  4. Layering, start with the cooked mince, a layer of aubergine slices, greek cheese mix.
  5. For the last layer top with greek cheese mix, then cheddar and parmesan cheese. Bake for 30-35 min Set aside for 10 mins before serving.
