The Ingredients need to make Zax Oven Roasted Chicken:
  1. You need 2 stick of rosemary
  2. It’s 1 tbsp of Black Pepper
  3. It’s 1 tbsp of Salt
  4. Prepare 1 tbsp of Oregano
  5. Prepare 1 tbsp of Parsley
  6. Prepare 1 tsp of Basil
  7. You need 1 tbsp of Cilantro
  8. Prepare 5 1/2 lb of Chicken
  9. Prepare 1 cup of Chicken broth
  10. You need 3 tbsp of Butter
  11. It’s 1 tbsp of Thyme
  12. It’s 1 tbsp of Tarragon
  13. You need 1 tbsp of Garlic Powder
  14. It’s of Vegetables
  15. You need 3 of Carrots
  16. You need 2 large of Yellow Onions
  17. Prepare 12 small of Red Potatoes
  18. You need 3 clove of Garlic
  19. It’s 1/2 bunch of Brussel Sprouts
Step to make Zax Oven Roasted Chicken:
  1. Preheat Oven to 375°F
  2. Make an incision on the top back of the breasts to be able to stuff the butter between skin and meat of breasts
  3. Cut one yellow onion in half and quarter each half.
  4. Stuff the quarters into cleaned chicken.
  5. Stuff 1 smashed garlic clove and 1 rosemary stick into chicken.
  6. Pour chicken broth into roasting pan.
  7. Coat chicken in butter and salt, pepper and garlic powder. Place in roasting pan.
  8. Cut the potatoes, carrots and the other yellow onion to desired size (I tend to go smaller than most). Put veggies in large bowl and drizzle olive oil on them. Dont go crazy with the oil. Coat with the rest of herbs and spice Also Ill mix up the veggies a lot. Brussel Sprouts are my latest obsession.
  9. Now, mix the bowl around and dump the whole mess right on top of the chicken and let the herbs hit the skin. Make sure to tidy up the roasting pan before placing in the oven.
  10. 23 to 25 minutes per pound at 375°F. Keep covered for the first half and then uncover for the second half of cooking time. Stir the veggies at this time.
  11. Once its all over let sit for 10 minutes and get cutting. I usually save the juices for gravy or make a bread dipping sauce.
