2. Prepare of onion diced
3. You need of garlic purèe
4. It’s of rashes of streaky Bacon chopped into bits
5. You need of italian herbs
6. You need of Sundried tomatoes in oil
7. You need of tomatoes chopped
8. It’s of Balsamic vinegar
9. Prepare of soft italian mozarella cheese
10. It’s of Eggs
11. You need of Salt and black Pepper to your taste

1. Ingredients
2. Melt the butter and adf the onion fry for 1 minute then add the garlic and bacon bits and fry until juices go and until bacon is crisped. Keep tossing
3. Bacon crisped. Next add the herbs, sundried tomatoe Then the tinned tomatoe Then the balsamic vinegar and mix let it come to the boil stir then add the 3 eggs seperatly.
4. Egg Let it bubble for 2 minutes then lower the heat to simmer until you see the egg yolk is cooking. Up to you if you want the yolk soft or hard i personally like it soft but cooked.
5. After eggs havve cooked for 3 minutes add the mozzeralla cheese inbetween each egg. You could finish off in the oven or leave it simmering to finish. Takes about 5 minute
6. Add the salt and pepper.near the end. Let it stand for 2 minutes before serving.
