The Ingredients needed to make Tender Chicken Karaage with Shio-koji:
- It’s 2 of Chicken thighs
- Prepare 2 tbsp of Shio-koji (salt-fermented rice malt)
- It’s 1/2 tbsp of Sake
- You need 1/2 tbsp of Soy sauce
- You need 1 piece of Ginger
- You need 1 of Eggs
- Prepare 5 tbsp of Katakuriko
Step to make Tender Chicken Karaage with Shio-koji:
- Cut the chicken thighs into bite-sized piece
- Add the soy sauce, sake, shio-koji and grated ginger to the cut up chicken and massage in well.
- Marinate for 30 minutes to an hour.
- Add the beaten egg and katakuriko and mix until its no longer floury.
- Its ok if its a bit soupy!
- Start frying at a low temperature of 160 to 170°C, then finish by frying at 180°C for a crispy finish. If you want it to be moist, try just frying it at a low temperature.
