The Ingredients needed to make Instant Pot: Cajun Chicken:

1. You need 3-4 of medium sized chicken breasts
2. Prepare 2 of red bell peppers
3. Prepare 2 of green bell peppers
4. It’s 2 cups of brown rice
5. You need 2 1/4 cups of water
6. You need 2 of chicken boullion cubes
7. You need 1 Tbsp of tomato paste
8. Prepare 3 Tbsp of melted butter
9. It’s of Minced garlic
10. It’s of Dry cajun seasoning
11. Prepare of Taco seasoning
12. Prepare of Roasted garlic bell pepper seasoning
13. You need of Olive oil
14. You need to taste of Salt pepper

Step to make Instant Pot: Cajun Chicken:

1. Set instant pot to sauté. While waiting for it to get hot, cut chicken breasts (in thirds) and bell pepper
2. Toss chicken in butter, coat with desired amounts of dry seasonings (The more cajun the better).
3. Put bullion cubes in 2 1/4 cups water and microwave for 2 minute Crush cubes with fork and stir. (Alternative option use 2 1/4 cups chicken broth - I just prefer to make my own!)
4. Sauté minced garlic in oil in instant pot for 2 min
5. Turn sauté mode off. Add brown rice and chicken broth to pot. Stir in tomato paste and 1 Tbsp cajun seasoning.
6. Lay peppers then chicken breasts over rice. Sprinkle additional cajun and taco seasonings on top.
7. Using manual setting on instant pot, set pressure to High. Adjust time to 25 minute
8. Once time is up, let sit for 10 min then move top switch to venting and let pressure out quickly.
9. Shred chicken with fork, stir, and enjoy!
