The Ingredients need to make Matcha Tiramisu:
  1. Prepare 4 of x 3 Savoiardi (Sponge Fingers)
  2. It’s 1-2 tablespoons of Matcha Powder
  3. It’s 1 tablespoon of Sugar
  4. Prepare 1/2 cup of Hot Water
  5. It’s 1-2 teaspoons of Rum
  6. You need 1/2 teaspoon of Matcha Powder for dusting
  7. Prepare of Filling
  8. You need 1 of Egg Yolk
  9. You need 2 tablespoons of Caster Sugar
  10. Prepare 1/2 tablespoon of Plain Flour
  11. It’s 1/2 cup of Milk
  12. You need 125 g of Mascarpone
  13. It’s 1/2 cup of Thickened Cream whipped
  14. It’s 1 of Egg White FIRMLY whipped
Step to make Matcha Tiramisu:
  1. Make soft custard fir Place Egg Yolk, Caster Sugar, Plain Flour and Milk in a heat-proof bowl and whisk well. Cook in the microwave at medium power about 500W for 2 minute Mix well, then cook again at medium power for 30 to 60 seconds, and mix well.
  2. Note Naturally you can cook custard in a saucepan. Cook over a medium to low heat, stirring constantly, until custard comes to the boil and thicken
  3. Allow the custard to cool, then place in the fridge. While the custard is cooling, whip Egg White and Cream in separate bowls, and prepare other ingredient
  4. To make Matcha mixture, combine Matcha Powder and 1 tablespoon Sugar in a small bowl, add hot Water and mix well, then add Rum.
  5. Combine the cold soft custard and Mascarpone in a bowl. Add whipped Cream and mix well. Then add firmly whipped Egg White and gently fold into the mixture.
  6. Dip Sponge Fingers into the Matcha mixture, and place them in serving glasse You can break Sponge Fingers to fit them in. Spoon the filling over the Sponge Finger
  7. Repeat for the second layer with the Sponge Fingers and the filling. Cover and refrigerate for at least 2 to 4 hour
  8. Right before serving, dust the top with Matcha Powder.
  9. Note You can simply replace the Matcha mixture with Espresso, and dust with Cocoa Powder for those who don’t enjoy Matcha flavour.
