Vietnamese Pickled Vegetables - Dua chua / Do chua. Curtido is an El Salvadoran pickled cabbage slaw recipe that is traditionally served with Pupusa Because Curtido is pickled with vinegar, it actually lasts for quite awhile in the fridge.

Pour vinager over mixture and add oregano. Carefully mix every thing together and add more salt if neccessary. Note: I always allow the completed curtido to sit overnight before serving.

The Ingredients need to make Curtido (pickled vegetables):
  1. Prepare of green beans
  2. It’s of very large carrot
  3. You need of large red onion, white is ok
  4. Prepare of celery stalk
  5. You need of red pepper
  6. It’s of Salt
  7. You need of Black pepper
  8. Prepare of Mexican Oregano large
  9. It’s of Bay Leaves
  10. Prepare of Vinegar (any is ok we had red wine)if a stronger use less
  11. It’s of Olive oil
  12. It’s of Hot sauce (optional)
  13. You need of Worcestershire sauce

Curtido - A cultured Salvadorian Slaw (similar to kraut) with cabbage, carrots, onion and oregano. Simple to make and FULL of healthy probiotics - use curtido on tacos, pupusas, quesadilla These spicy pickled vegetables are so good! Once you try these spicy pickled vegetables, you cant stop eating it!

Step to make Curtido (pickled vegetables):
  1. Boil green beans until soft. Cut in half by hand.
  2. Boil carrot until softened but still firm in middle. Chop in long wedges about the same length as bean
  3. Quickly sauté carrots and beans in some Olive oil, 2tbsp of vinegar, salt, and pepper to taste. About 2 mins remove from heat to stop cooking and put it in a non-metal bowl.
  4. Cook the olive oil with Mexican Oregano and Bay Leave Then cook until translucent the onion, celery, red pepper with salt and pepper to taste. About 4-5 Then add Worcestershire and hot sauce at the end. Remove from heat and place in bowl with beans and carrot
  5. Mix the vegetables and let cool at room temp. Put in fridge for at least 2 hrs or overnight for more flavor.

I learned this incredible recipe from my Honduran neighbor and it is the perfect. Curtido is a fermented sauerkraut like condiment from El Salvador. It is traditionally served with pupusas; however, Ive also seen fermented curtido served on tacos at trendy Mexican restaurant This should be vinegary and with the slightest hint. These vinegary pickled chiles are an essential condiment for all kinds of street foods in Mexico.
