The Ingredients needed to make Curry Chicken Bowl:
  1. Prepare 1 lb. of Chicken Breasts, boneless/skinless, cubed
  2. It’s 2 Tb of Olive Oil
  3. It’s 2 C. of Cauliflower Rice
  4. You need 1/2 C. of Greek Yogurt
  5. It’s 1 Tb of Tomato Paste
  6. You need 1/2 C. of Onion, chopped
  7. It’s 1/4 tsp. of Salt
  8. You need 1/8 tsp. of Pepper
  9. You need 1/8 tsp. of Smoked Paprika
  10. You need 1/2 tsp. of Ground Cumin
  11. You need 1 1/2 tsp. of Curry Powder
  12. Prepare 1/2 C. of Shredded Mozzarella
Step to make Curry Chicken Bowl:
  1. Preheat oven to 350°. Place chicken on a baking sheet. Bake for 25-30 minutes or until cooked through. While chicken cooks prepare other ingredient
  2. In a sauté pan, cook cauliflower, onions and bell pepper.
  3. In a bowl, mix together yogurt, tomato paste and all the seasoning
  4. When the chicken is done, toss it with the yogurt mixture stir to coat.
  5. Divide the cauliflower mixture between 2 bowl Top each with half of the chicken and then half of the mozzarella.
