The Ingredients needed to make Mauritian Curry:
  1. You need 2 Tbs of Olive oil
  2. Prepare 8 of Curry leaves
  3. Prepare 1 of Onion, Chopped
  4. You need 3 of Garlic Cloves
  5. Prepare 1 Inch of Ginger, Finley chopped
  6. Prepare 1 of Cinnamon stick
  7. It’s 4 of Birds eye Chillies, Chopped
  8. It’s of Couple sprigs of Thyme
  9. Prepare 3 Tbs of Mauritian Curry powder or Garam Masala
  10. It’s 600 g of Chicken Thighs
  11. Prepare 2 of Tomatoes, Chopped
  12. You need 3 of Potatoes, Cubed
  13. You need 1/2 of Red Onion, Finley sliced
  14. You need of Corriander leaves for garnish

Its full of flavour but less tricky to make than other curries as it relies on curry powder rather than paste. Selina Periampillai, aka Taste Mauritius, is a passionate and self-taught cook who specialises in the exotic and tantalising flavours of Mauritian cuisine. This is a sprightly curry, fierily orange and warm with cinnamon and nutmeg. Make some plain basmati rice to go with it and youre done.

Step to make Mauritian Curry:

  4. Add the chicken pieces, Chopped tomatoes and potatoes, thoroughly coat with the spice Add warm water just below the level of the chicken and potatoe
  5. Cook for around 25 minutes or till the chicken and potatoes are cooked through.
  6. Garnish with Corriander and thinly sliced red onions, Serve with rice or fresh Rotis👌
