The Ingredients needed to make Crockpot Tomato Soup:
  1. You need of 28oz Can of Diced Tomatoes
  2. Prepare of 8oz Can of Tomato Sauce
  3. Prepare of fresh finely chopped basil
  4. It’s of Minced Garlic
  5. Prepare of Salt
  6. Prepare of pepper
  7. Prepare of Medium White Onion-diced
  8. It’s of Heavy Cream or Half Half
  9. You need of Chicken broth
  10. It’s of Shredded Parmesan
  11. It’s of Roux
  12. Prepare of butter
  13. You need of flour
  14. You need of heavy cream or halfhalf
Step to make Crockpot Tomato Soup:
  1. Add diced tomatoes, tomato sauce and next 7 ingredients (through chicken broth) into crockpot. Cover and cook for 2 hours on High or 4-8 on Low. Occasionally stir and scrape down side
  2. About 30-40 minutes before serving transfer to a blender or food processor and puree until smooth. Then return to crockpot.
  3. Once blended prepare roux In a saucepan melt butter on medium heat. Add flour, mix until clumpy, continuously stirring for about a minute until flour is blended. Slowly whisk in heavy cream or halfhalf adding a little at a time.
  4. Pour roux and parmesan cheese into crockpot and mix. Allow to cook another 20-30 minutes until cheese is completely melted and give it a good stir before serving
  5. Top with additional basil and parmesan cheese if so desired and serve with crackers!
