This chunky vegetable soup is thick with potatoes, edamame, okra, kale, and corn. I make this super-easy vegetarian vegetable soup about every other week. Its thick and hearty, almost like a stew. This soup recipe uses variety of vegetables and vegetable stock to make it more healthy and tasty.

Step to make Vegetable soup (Edikaenko):
  1. Wash your vegetables thoroughly with salt and water and put in a sieve to drain out excess water, then set aside.
  2. Wash your meat and boil with onion, salt, spices, seasoning and water enough to cook it till tender.
  3. Wash and dice your kpomo and set aside. Wash your periwinkle with salt and water and set aside
  4. Blend your fresh pepper coarsely and set aside.
  5. When your meat is almost done, add your kpomo, stock fish and periwinkle and allow to cook with the meat.
  6. Ensure the meat stock is completely dried, then add your grinded fresh pepper, and keep stirring
  7. Next, add your palm oil, then taste for salt and seasoning
  8. Next add your water leaves and allow to boil for a while, you will see the leaf would bring out its own water
  9. Lastly, add your Ugu leaves, stir and allow to cook for about 1-2min Be careful not to overcook, so your vegetables dont end up weak.
  10. Your vegetable soup is ready, enjoy with semo or eba.
