The Ingredients need to make Kerala Egg Roast:
- You need 4 of eggs
- It’s 2-3 of chopped onions
- It’s 2 of chopped tomatoes
- You need 1 tsp of salt
- It’s 1 tsp of turmeric
- Prepare 2 tsp of red chilli powder
- It’s 1 tsp of coriander powder
- Prepare 1 cup of coconut milk
- You need 6-8 of curry leaves
- You need 2 tsp of garlic paste
- It’s 1 tsp of ginger paste
- Prepare 6 tsp of coconut oil
- Prepare 1 tsp of fennel seeds
- You need 2-3 of green chillies
Step to make Kerala Egg Roast:
- Firstly boil the eggs, peel them and set aside.
- Take a kadhai, add coconut oil and heat it. Add curry leaves and fennel seeds and let the seeds splutter.
- Add chopped onions and cook till soft.
- Into it add chopped tomatoes and mix well. Cook for few minute
- Add salt, chilli powder,green chillies, turmeric powder, coriander powder, ginger and garlic paste and mix well. Cook until the tomatoes turn soft.
- Add coconut milk and cook for 10 - 15 minute
- After 15 minutes add boiled eggs into the gravy by slitting the eggs slightly.
- Cook and roast the gravy until the gravy is roasted well along with the egg
- Ready to serve Kerala Egg Roa
