The Ingredients needed to make Queso chicken instant pot ip:

1. It’s 2 tbsp of olive oil
2. It’s 1 of medium sized yellow onion diced
3. You need 1 of large chicken breast
4. Prepare 2 cups of chicken broth
5. You need 1 of jalapeno seeds removed
6. It’s 1 (1 oz) of packet of your favorite taco seasoning
7. Prepare 28 oz of can of diced tomatoes with juices
8. Prepare 1 cup of your favorite salsa
9. Prepare 1/2 tsp of kosher salt
10. Prepare 8 oz of cream cheese diced
11. You need 8 oz of monterey jack cheese shredded
12. Prepare of Avocado diced

Step to make Queso chicken instant pot ip:

1. Turn on instant pot to high saute setting. When pot reads hot add in the olive oil.
2. Add in onion and cook for 2 minute Add in chicken and cook until meat turns white.
3. Add in the broth. Scrap bottom of pot and remove any bits that may be stuck.
4. Add in jalapeno, taco seasoning, diced tomatoes, salsa, and salt. Mix well.
5. Add in cream cheese. Do not mix.
6. Put on lid making sure vent lid is closed. Cook for 10 minutes then allow a 10 minute natural release.
7. Remove lid. Turn off keep warm and hit the saute button.
8. Stir until cream cheese is melted. Switch back to keep warm.
9. Add in 1/2 the monterey jack cheese. Still untill melted.
10. Plate and top with more monterey jack cheese and avocado.
11. Enjoy!
