The Ingredients need to make Meen Varuthathu (Kerala Style Fish Fry):
  1. Prepare 12 of Pomfret Fillets (Avoli/Paaplet)
  2. You need 1 sprig of Curry Leaves
  3. You need 2 tbsp of Rice Flour
  4. It’s As Required of Coconut / Vegetable Oil for shallow frying
  5. It’s of For The Marinade
  6. Prepare 2 tsp of Coconut Oil / Vegetable Oil
  7. Prepare 4 of Dry Red Chillies Deseeded
  8. Prepare 10 of large Garlic Cloves
  9. You need 1/2 ″ of Ginger
  10. Prepare 1 1/2 tsp of Black Peppercorns
  11. Prepare 2 tsp of Fennel Seeds
  12. Prepare 1 tsp of Turmeric Powder
  13. It’s 2 tsp of Tamarind
  14. It’s to taste of Salt
Step to make Meen Varuthathu (Kerala Style Fish Fry):
  1. To make Meen Varuthathu (Avoli/Pomfret Fish Fry), clean and rinse the pomfret well. Drain away all excess
  2. Discard the unwanted parts and cut it into approximately 1 cm thick fillet
  3. For the marinade, first heat a small pan and add oil to it. Add to it the dry red chillies and roast slightly.
  4. Grind it together with the garlic cloves, ginger, black peppercorns, fennel seeds, turmeric powder, tamarind and salt to taste using very little water to get a thick paste.
  5. Add the oil, remaining after roasting the red chillies, as well as the rice flour to the marinade.
  6. Alternatively, instead of mixing in the rice flour, it can be used for dusting the fish before frying which prevents the spice paste from separating during frying.
  7. Rub this marinade on both sides of the pomfret fillet Keep aside to marinate for about half an hour.
  8. To make the fish fry, heat a griddle and add oil to it. When the oil heats up, add the curry leaves and stir.
  9. Slowly release each of the marinated pomfret fillets either as they are or after dusting with rice flour, into the hot oil.
  10. Reduce the flame to medium and fry well, till both sides of the pomfret are well done and crisp.
  11. Serve this delicious Meen Varuthathu with some Meen Moilee and steamed rice and some salad by the side!
