The Ingredients need to make Mediterranean Quinoa Salad:

  4. It’s 1 Can of Low Sodium Chicken Broth
  5. It’s 1 Can of Cannelli Beans, rinsed and drained
  6. Prepare 1 Can of Sliced Black Olives
  7. It’s 1 Pkg of Grape Tomatoes, halved
  8. Prepare 1 of Large Onion diced
  9. Prepare 2 of Bell Peppers diced
  10. It’s 1 Tsp of Garlic Powder
  11. It’s 2 Tsp of Basil
  12. You need 1 Tsp of Salt
  13. Prepare 1 Tsp of Pepper
  14. It’s 1 Tbsp of Oregano
  15. Prepare 1 Tsp of Granulated Sugar
  16. It’s 2 Tbsp of Red Wine Vinegar
  17. It’s 1 of Juice from Lemon
  18. Prepare 2 Tbsp of Water
  19. Prepare 1 Tsp of Dijon Mustard
  20. You need 1 Cup of Extra Virgin Olive Oil
Step to make Mediterranean Quinoa Salad:
  1. Bring quinoa and chicken broth to a boil, then cover and simmer on low for 20 minute Set aside to cool.
  2. Bring lentils and chicken broth to a boil, partially cover with lid and reduce heat. Cook for 30 minutes or until tender. Set aside to cool.
  3. In a large bowl, combine quinoa, lentils, cannelli beans, grape tomatoes, olives, onions, and pepper
  4. For Vinaigrette In blender add garlic powder, basil, salt, pepper, oregano, sugar red wine vinegar, water, and dijon mustard. On low speed slowly add olive oil until mixed.
  5. Pour vinaigrette over quinoa mix and mix well.
