  1. It’s 4 cloves of garlic - sliced
  2. Prepare 1 of courgette
  3. It’s 1/2 teaspoon of hot paprika
  4. You need 1 of bay leaf
  5. Prepare 2-3 of smoked chillies
  6. Prepare 1 splash of sherry vinegar
  7. Prepare of Chopped parsley to garnish
  8. It’s of Olive oil
  9. Prepare of Lemon wedge (optional)
  10. Prepare Slices of Crusty bread
Step to make Tapas: Calabacin Al Ajillo 🌱 (courgette in garlic and hot chilli and paprika oil):
  1. Slice the courgette (or tofu). Mix the paprika and a little olive oil and marinade the square
  2. Fry the garlic and smoked chilli in a little oil until it starts to colour. Remove from pan and place in the dish. Fry the courgette circles in the same oil.
  3. Garnish with a sprinkle of parsley and a lemon wedge if you are using.
